Reduced Nutrient Density - Processed foods

Empty Calories: "calories from solid fats and added sugars in foods and beverages" (1)

Many people understand empty calorie foods (energy dense foods) and examples of them: Kit KatGrape SodaCookies.  Check out the nutrional value of canned pasta, or the lack of it. The amount of added sugar and solid fat in this food are low so technically it isn't considered an empty calorie food. When we look at this and other processed foods: Graham Crackers, Baked FriesNutri-grain barWhole-wheat crackers, Corn Flakes we see a lack of nutrient density. Aside from the artificial vitamins/minerals present in the cereal, all we find in these foods is calories and trace minerals.  Guess where these particular foods were listed?

These foods are actually recommended to replace other processed foods.  Honestly we don't need to be eating any of these foods and if you are you might as well eat the most tasty one because the difference between their suggestion and the purported empty calorie food is negligible if not absent.

This fruit bar has no redeeming qualities whatsoever.  The chocolate yogurt has some added sugar but it also has calcium and some antioxidants from the chocolate.  My main point here is that foods don't need to be high in fat and sugar to still be an empty calorie food.  At the same time, foods with a lot of fat and sugar can still have beneficial nutrients.  A prime example of this is dark chocolate.

My sugar addiction.

Here is a quick post about my experiences with sugar and bad fats and how they made me put on ~6 pounds of fat in 2 weeks.  I deliberately ate much more sugar and trans fats than I ever have before in my life.  The funny thing is that I didn't need to go out of my way to obtain the extra sugar and fat.  In my everyday life I constantly have these foods offered to me but usually I reject them.  I was curious to see how it feels to be in the same boat as the average American who consumes a large quantity of added sugars.  I also wanted to see how my body would react.  I have counseled others on their diets and I wanted to know how they feel eating so much sugar so that I could better help them.  For long-term health the process I went through is detrimental and I don't recommend it to anyone.  Added sugar is the absolute worst legal delicious food product you can put in your body.  I did this over winter break when I had minimal work/school responsibilities.

I increased my added sugar intake from ~40g per day(terrible already I know) to ~80g and sometimes more.  I consumed trans fats from donuts, pies, cakes, ice cream, cereal, and cookies.  Previously I rarely consumed these types of foods so my trans fat intake was negligible.

I still have sugar crashes but now they are worse.  Before I would feel lousy and drowsy but now I can barely keep my eyes open no matter what I do.  I feel more tired now after 8.5h of sleep than I did after 6.5 on a healthy diet.

I have been skinny my entire life and never gained fat in any significant quantities until now.  The one thing I always limited myself on was dessert.  I would occasionally have one or two nights of heavy sugar/fat but that would be the end of it.  Even for someone like me with a "fast metabolism" these kinds of foods can still cause deadly changes.

Sugar is addicting, more addicting than cocaine. (1)  It releases dopamine in a similar way to drugs. (2)  I completely understand why it is so hard to quit sugar and I am not looking forward to it.  I plan on going cold turkey tomorrow 12/29 so my body can regulate itself and get back down to a healthier body fat percentage.  After the first week of eating like this, I noticed how much I craved sugary foods and now if I don't eat them my body feels slight withdrawal symptoms.  I will update this post in a couple weeks to talk about how hard it was to quit and what methods I employed.  We'll also see how fast my body drops the fat pounds.

Cold-turkey is a hard way to quit.  I ended up tapering down my sugar intake gradually and now I am back to a normal weight.

Food Spotlight: Wild Mustard(Brassica oleracea)

This amazing plant is cultivated to make cabbage, broccoli, cauliflower, kale, Brussels sprouts, collard greens, savoy, kohlrabi and Chinese kale.  Wikipedia has some good quality pictures of which my favorite is shown below.

Though it may be ridiculous looking, this species makes up a huge portion of the vegetables we eat and should eat more of.  Both kale and collard greens, which many people understand are superfoods, are actually cultivars of this species. In my previous post, I discussed some foods that are high in nutrient density.  All the cultivars of Brassica oleracea are on this list except for Savoy and Chinese kale.  I was unable to find reliable nutrition information for Chinese kale, meaning it may not be on the list is because it is relatively unknown.  Savoy has a similar nutrient composition to broccoli so it can be considered of similar caliber.

Ingredient Spotlight - Nitrates and Nitrites

Sodium Nitrite and Sodium Nitrate are found in many processed foods because of their preservative effects.  They are also found in high concentrations in vegetables like spinach because of our fertilizing practices. (1)  Methemoglobinemia is a disease found usually in infants that is understood to be caused by Nitrates in drinking water as well as from spinach. (2)  An easy way to counteract this disease is to simply take vitamin C. (2)  Aside from this, no adverse effects have been found from nitrates and nitrites in food and certain benefits have actually been observed.  Blood pressure was slightly reduced by ingesting a nitrate supplement. (3)  Another study surprisingly found that nitrate enhanced energy production and reduced oxygen demand during submaximal exercise. (4)

At least from a brief review of the literature, it appears as though nitrates and nitrites may not be as detrimental as some claim.

Recipe - Power Slop

I like to eat pumpkin straight out of the can because it has many health benefits.  It is high in fiber and vitamin A and studies have shown it has high antioxidant potential. (1, 2)

Pumpbutter:
  • Can of pumpkin (reduce to half can for a less healthy but tastier version)
  • Cinnamon
  • Nutbutter(Sunflower, peanut, cashew, almond etc)
  • Vanilla Extract
  • Sucralose(1 packet)



This is probably one of those things that looks disgusting but turns out to be pretty good once you figure out what combo works for you.  This can be a quick and easy snack or a way to eat peanut butter when you run out of bread.  This is a good thing to knockout your appetite and make you not want to eat again for a while but adding excessive sugar will make you want more.

Chocolate pumpkin:
  • Half can pumpkin
  • ~3 tbsp unsweetened cocoa powder
  • ~4 drops stevia
  • Hefty amount of vanilla extract
  • ~1 tsp cinnamon


If you want to detoxify yourself and reduce inflammation, this is the way to do it.  Cinnamon, and Cocoa Powder have high ORAC(antioxidant) values but Pumpkin surprisingly does not for some reason.

Pumpkin and Banana:
  • Half can pumpkin
  • 1 Banana
  • ~1 Tsp Cinnamon
  • Stevia(optional)
  • Vanilla Extract(optional)

This one is quick and easy. If you like it a little sweeter you can add more banana or sweetener.

Ashwagandha (Withania somnifera)

Ashwagandha has been researched as a supplement to promote overall health through stress reduction by antioxidant activity. (3, 4, 5)  I purchased some after noticing benefits from an ashwagandha containing beverage.  After just one pill I can notice a difference in overall mood and focus.  One study showed positive effects for the immune system, even overriding the effects of other drugs. (2)  In another study, ashwagandha was shown to act as an antioxidant but not in the same way as Vitamin C, A, or other common antioxidants.  Rather, it acted in a separate pathway to accomplish its free-radical scavenging. (3)

A study evaluated the contents of various Ashwagandha supplements and found widely differing concentrations of Withanolides, Withanone, and Withaferin A, which are the active constituents in Ashwagandha. (6)  Nutrigold has many claims of why their product is effective and superior.  Ashwagandha Gold has less than .1% Withaferin A which is claimed by Nutrigold to have cytotoxic effects. Cytotoxicity is confirmed as well as other immunosupressive effects. (6,7)

Recipe - Vinegar Chicken

Ingredients:
  • Chicken Breast (Fresh or Frozen)
    • Can also use tenderloins, wings, drumsticks
  • Vinegar (Red Wine, White, Apple Cider, etc)
  • Non-stick pan
Fill up the pan with an inch or so of water and add roughly a third of that volume worth of vinegar.  I like to mix a few different vinegars together.  Cook on medium heat until the center is no longer pink. Chicken breasts usually take me 20-30 mins but it varies a lot based on your pan and stove. I make this recipe every time I don't have a lot of time to marinate and season chicken before cooking.  The chicken should always come out tender if you use plenty of vinegar and don't overcook it.  Any sort of dipping sauce goes great with this chicken.


Some weird dipping sauces I use:

  • Mayonnaise with mustard
    • ~4:3 ratio
  • Sriracha, mayonnaise, ketchup
    • ~1:3:2
  • Ranch with franks red hot
    • ~4:1
  • Mayo with Tabasco(chipotle flavored)

Recipe - Nuked Eggs


Ingredients:
  • Eggs 2-8
  • Decent sized Bowl
Optional Ingredients:
  • Spices - parsley, pepper, salt, italian seasoning, steak seasoning, adobo, seasoning salt
  • Cheese
  • Hot Sauce
    • Above picture has chipotle tabasco hot sauce
  • Salsa
  • Meat
  • Sardines
  • Beans
  • Vegetables
  • Herbs & Seasonings:
    • Seasoned Salt
    • Salt and pepper
    • Garlic/Onion powder
    • Steak Seasoning
    • Pork Seasoning
    • Lemon Pepper Seasoning
    • Sazon
    • Adobo
    • Chives
    • Parsley
    • Dill
    • Tarragon
For a fast, easy breakfast, whisk as many eggs as you want in a bowl with a fork and stick it in the microwave.

Depending on your microwave 2 eggs = 1.5 mins 4 eggs = 3 mins.  Trial and error is necessary to figure out exactly how long to cook your eggs but the area to look for is the bottom middle section of the bowl.  Usually this part gets under-cooked so whenever that becomes fully cooked, you are good to go.  About 10 seconds after the eggs stop rising is a good time to take them out.  I prefer not to scramble them too much as you can see in the first picture.  I stir them once at around half of the cooking time when the edges are cooked about an inch towards the center of the bowl.

Herbs should be put on after cooking while other spices that won't be affected by heat very much can be put in whenever.

Primanti Bros. - A Candid Review

I received a Primanti Bros. gift card from my parents a year ago so I tried their sandwiches and wings.

I don't want to discourage anyone from trying their food, but it personally I felt underwhelmed.  It is definitely unique and worth eating once or twice, but the sandwiches are dry and nearly impossible to eat without some type of sauce.  After putting hot sauce or ketchup on them they become even more salty, which you may not notice until you need a gallon of water afterwards.  The bread is usually chewy.  I hope these attributes only apply to the location that I go to because I can imagine these sandwiches being good if they're given a little more love.

Recipe - Chocolate Yogurt


This is a quick and easy way to increase your mineral, fiber, and antioxidant intake. Unsweetened Cocoa Powder nutrition facts
  • Plain Greek yogurt
  • Unsweetened cocoa powder (100% Cocoa)
  • saccharin/aspartame/sucralose/ace k
  • stevia
  • Sugar alcohol like xylitol, erythritol, sorbitol, mannitol(optional)
  • Nuts(optional)
  • vanilla extract(optional)
  • honey(optional)
  • Pinch of Cinnamon(optional)
  • sugar(optional)
Mix the greek yogurt with the unsweetened cocoa powder and sweetener(s) of your choosing.  More chocolate=more bitter but more minerals.  The more chocolate is used, the more sweetener should be used.  The nice thing about chocolate is that its flavor is so powerful it usually covers up the aftertaste of the various sweeteners.  Combinations of sweeteners also aid in reducing aftertaste.  Caution should be taken with the amount of artificial sweeteners you use as studies have shown toxic  and carcinogenic effects. My usual blend:

  • 1 cup greek yogurt
  • 1 packet artificial/natural sweetener
  • 1 packet different artificial/natural sweetener
  • 1 full dropper of liquid stevia (or 2 packets)
  • 1/2 tsp vanilla extract(alcohol free)
  • 2 tbsp unsweetened cocoa powder

Recipe - Conglomerate Cakes

Cheap, quick, easy, odd recipe.  They look a bit like concrete but taste great in my opinion.  When you see the ingredients don't give up.  Cooks best in a nonstick skillet.


  • 2 packs sardines in water (only add water from 1)
  • 2lb bag cooked pinto beans(or any other beans)
  • ~1 cup ground flax/chia seeds
  • 6 eggs
  • parsley ~3Tbsp
  • pinch of salt
  • oil(optional)
  • garlic powder, onion powder, italian seasoning, chili powder are all optional because I like to put hot sauce, mustard, ketchup, ranch, bleu cheese or pretty much any other condiment on them after I cook them

Mash up the beans at least this much.  I usually go further but I was in a hurry today.  If you leave a lot of whole beans it will be harder to cook the cakes without them falling completely apart.

This recipe can be tweaked completely to fit your needs.  More eggs=thicker, easier to cook cakes.  More sardines=fishier, healthier cakes.  More ground flax/chia seed=more nutty flavor and thicker batter.  Any soft fish or ground meat can be substituted for sardines or taken out completely.

Energy Drinks should be used sparingly as they decrease endothelial function and increase platelet aggregation. (4)  Coffee and tea are much healthier caffeine sources.  Energy drinks also burden your liver because many of them have added sugar or artificial sweeteners.  The best way to use caffeine is to avoid having it every day.  Over time our bodies develop tolerance to it making it less effective.  By consuming caffeine sporadically, tolerance can be avoided. (8)

This has turned into a collection of the energy products I have tried more than an actual guide but hopefully it can be useful to some of you.

I recently requested the concentrations of different ingredients claimed to boost energy that are found in these drinks below. No companies have responded as of yet (10 days later).  I would guess that the rumors that the ginseng, milk thistle, acai extract etc are too negligible to notice might be true.

It looks like this drink is fairly new and limited to CA for the moment.  I'm not sure if it was unsuccessful and ended up at big lots or if they are testing the market in Florida but either way I am glad to have found it.  The sugar level is slightly lower (46g) than most 16oz energy drinks which I find to be favorable. This drink gave me lasting energy with no crash even though it has 250mg of caffeine.

This is the first energy drink I have seen that contains D-Ribose.  There has been ongoing research about ribose and D-ribose supplements that I have only heard good things about.  The taste was great for this drink, as is to be expected from most main stream sugared energy drinks.  I am waiting now to see if I crash or if it even picks me up in the first place.

          3. This tastes like a bowl of cinnmon toast crunch. I would drink this as a dessert.  I crashed super hard after this for some reason. I hypothesize it is due to the high milk sugar content but I did also drink a sugarfree red thunder with it as well which may have been a bad combo.
            1. I drank it alone and it had the same effect.  Lactose always makes me sluggish.
